These classic shortbread biscuits are so easy to make and only need a few ingredients!

ingredients: 

  • 230g soft butter

  • 85g icing sugar

  • ½ teaspoon vanilla extract

  • 250g plain flour

  • Extra sugar for sprinkling

how to make them

  1. Line a large baking sheet with baking parchment.

  2. In a large mixing bowl, use a stand mixer or hand mixer to beat together the butter and icing sugar until it’s light and fluffy.

  3. Add in the vanilla extract and mix it in.

  4. Now add in the flour and mix in slowly until it disappears.

  5. Empty the dough onto the baking sheet and then flatten it out with your hands until it looks like a pizza. It needs to be around 1-2 cm high.

  6. Cover with cling film and put the baking sheet in the fridge for around 30 minutes.

  7. Heat the oven to 180°C/Gas Mark 5, for around 10 minutes.

  8. Prick the shortbread dough all over with a fork. You can also pinch the edges a little between your thumb and index finger, to give it a little pattern all the way around the sides.

  9. Now put the baking sheet into the oven and bake for around 15 minutes. The shortbread should be a very light brown.

  10. Ask your adult helper to remove the tray from the oven and slice the shortbread into triangles straight away.

  11. Sprinkle with a little bit of sugar - you can use light brown sugar, normal white sugar or icing sugar - and then enjoy them whilst they're warm!
