These delicious, delectable and delightful date cookies are especially yummy when fresh! Can you think of any more words beginning with D to describe them?
You will end up with a lot of cookies, which makes them perfect for sharing with neighbours or relatives.
ingredients:
6oz sugar
8oz soft butter
3 eggs
8oz self-raising flour
2oz plain flour
1 cup dates, with the stones removed
½ cup walnuts and/or pecan nuts
how to make them
Ask an adult to turn on your oven to 180°C.
Mix together the butter and sugar, until soft and creamy. You can use a food processor or electric whisk if you have one.
Crack the eggs into a separate bowl, making sure there are no pieces of eggshell inside. Now, add them slowly into the butter and sugar mixture, and whisk it all together.
Mix in all the flour.
Chop up the dates and the nuts into small pieces, and gently stir them into the dough.
Grease two baking sheets, by spreading a bit of butter or a few drops of oil all over. This will stop the cookies from sticking.
Scoop out the dough with a tablespoon (it will be quite sticky), and dollop onto the baking sheets. Leave some space in between each one, as they will spread.
Bake for 12-15 minutes, until golden in colour.
